In 1994, the Raintree became part
of Concepts Restaurants Inc. In the position of Executive Chef,
I oversaw the opening of three restaurants- the Harvest Moon Cafe
in Victoria, North 49 Restaurant and Market, and Restaurant Starfish
and Oyster Bar. While at the Raintree, Whitecap Books invited me
to write a book for them and Pacific Passions was released in the
fall of 1995.
In December of 1994, I was approached by Kanke Seafood Restaurants
to re-open the Fish
House in Stanley Park as Executive Chef. I saw this as
a perfect opportunity to share my cooking style and hone my management
skills to the fullest.
My second book, Screamingly Good Food, was released in the fall
of 1997. I am proud to say that it became a best-seller and came
in second at the first Cuisine Canada cookbook awards.
