Preheat the oven to 350°F (175°C). Butter and
flour a 9-by 13-inch (23-by 33-cm) baking pan. Combine
the flour, baking soda, cinnamon, salt and nutmeg in
a large bowl. Stir well with a whisk. In another large
bowl, beat the oil, butter, sugars, eggs and vanilla
together with a whisk until light. Beat in the flour
mixture until smooth, then fold in the apples. Pour
into the prepared pan and smooth the top. Bake for 45-50
minutes, until a cake tester comes out clean. Remove
to a rack to cool in the pan.
To make the honey sauce, combine the honey, butter, cream and salt in a heavy pot. Bring to a boil, stirring occasionally, and boil for 1 minute. Serve warm over the cake.
