Choose a fragrant honey for the sauce of this simple cake. It makes all the difference.
Makes 1 9-by 13-inch (23-by 33-cm) pan

3 cups flour 20 ml
1 1/2 tsp. baking soda 7.5 ml
1 tsp. cinnamon 5 ml
1/4 tsp. salt 1.2 ml
1/4 tsp. grated nutmeg 1.2 ml
3/4 cup vegetable oil 180 ml
1/4 cup unsalted butter, melted 60 ml
1 cup granulated sugar 240 ml
1 cup dark brown sugar, packed 240 ml
3 large eggs 3
2 tsp. pure vanilla extract 10 ml
3 large apples, peeled, cored and thinly sliced 3
1 cup honey 240 ml
1/2 cup unsalted butter 120 ml
1/2 cup whipping cream 120 ml
pinch of salt

Preheat the oven to 350°F (175°C). Butter and flour a 9-by 13-inch (23-by 33-cm) baking pan. Combine the flour, baking soda, cinnamon, salt and nutmeg in a large bowl. Stir well with a whisk. In another large bowl, beat the oil, butter, sugars, eggs and vanilla together with a whisk until light. Beat in the flour mixture until smooth, then fold in the apples. Pour into the prepared pan and smooth the top. Bake for 45-50 minutes, until a cake tester comes out clean. Remove to a rack to cool in the pan.
To make the honey sauce, combine the honey, butter, cream and salt in a heavy pot. Bring to a boil, stirring occasionally, and boil for 1 minute. Serve warm over the cake.
